Maine is known as one of the most healthful states in the nation, and perhaps it’s the blueberry, Maine’s official state berry, to thank in large part. Native Americans valued wild blueberries for their nutritional and healing qualities long before European settlers arrived in North America; they encouraged their growth, gathering and eating them in season and drying them for use in winter.

Early settlers also cherished blueberries as a staple ingredient in foods and medicines. The first cultivated highbush blueberries were transplanted from the wild. Highbush berries are larger, growing on bushes that are 4-8 feet tall, and are relatively simple to choose by hand.

The wild blueberry holds a special place in Maine’s agricultural history, first being harvested commercially from the 1840s. Both wild and cultivated types are now thriving industries in the state; Maine produces 99% of all the blueberries in the country, making it the single largest producer of blueberries in the USA and the largest producer of wild blueberries in the world.

They thrive in the naturally acid, low-fertility soils; cool, moist sea air; and challenging winters; and, since they’re native to Maine, are naturally resistant to many native pests. Several varieties ripen at different times throughout the summer, and will often remain ripe into early autumn. Wild blueberries require minimal control and are sweet and irresistibly delicious.

Today blueberries are one of Maine’s most important agricultural crops, making a contribution to the state’s economy to the tune of more than $75 million annually. Moreover, thanks to new knowledge about the health and nutritional advantages of blueberries, there’s a growing demand for both fresh and processed wild blueberries in the U.S. and abroad.

Don’t you just love Pancakes? All of my life I have never missed tosssing pancakes on Shrove TuesdayI never made pancakes today as my daughter needed to make them. Anyway here I have included a few habits for Shrove Tuesday.

A famous pancake race at Olney in Buckinghamshire has been held since 1445.

Many towns throughout England held traditional Shrove Tuesday football (animal removal company) games dating as far back as the 12th century.

In Ireland, Australia, and Canada, Shrove Tuesday is known as”Pancake Tuesday”, while in Britain it is popularly known as”Pancake Day”. Children have great fun with the tradition, and frequently eat more than their fill of pancakes in search of a desired object.

Pancakes are eaten to use up eggs and milk, which aren’t eaten during Lent, and would otherwise spoil during this period.

Strawberry Jam

Latest news from the strawberry jam front – the wave of strawberries is advancing, threatening to engulf me in a wave of strawberries waiting to be processed, taking up whole shelves of the refrigerator, lurking in corners just when I thought I’d done the last batch. Heaving a sigh of relief because the final pot is filled and sealed, I turn around only to find the kitchen table groaning beneath a fresh sea of newly selected berries waiting to be sorted.

There’s not any more space on the larder shelves for jam – what I’ve got there already will probably last us a decade in the present rate of consumption, I have used up all the jam jars and am down to strangely shaped mustard jars, coffee jars and outsized sauce jars and there are still a fantastic few weeks of strawberry season to go.

I have to start selling the jam….memories of a film, where ex-city career girl, moves to country with baby in tow, begins making apple puree baby food and ends up with a full scale company employing half the village, flit through my head. Country baby was her label, with a cute picture of baby, designed to appeal to other city people searching for the fantastic life. Mind you she was a PR person, so had a head start on boosting things and I am not a business person in any way, just someone with too much jam on their hands, larder shelves and everywhere else in the home.

I find a few things – people smile when they see strawberry jam, people like berries, there is a high feel-good factor about them, they conjure up summer and celebration and treats. It is not a difficult product to market, people are predisposed in its own favour; the price just has to be not too frightening. Some people are more attracted by the pretty fabric covers on the lids and choose one to match their kitchen décor…I’ll have to work on the fairly aspect. No I’m not about to turn into a strawberry jam millionaire, but I did sell ten jars.

After thinking I had got the jam consistency sorted, making reliably runny but not too runny jam, I turned out several batches that set completely – thick solid stand-up-your-spoon-in jam. Now I know that it’s all about pectin and how much Bat in Attic, but why now? I did leave it soaking in the sugar longer since I did not get around to cooking it till the afternoon, but does this do anything to pectin levels?

Anyway, I now have two kinds of strawberry jam – thick and runny, both have a fantastic flavour – and both sorts have their aficionados. However, now the dilemma is, am unable to replicate the thick jam to order or will it just happen by accident? A wing and a prayer is more like it. So prayer it’ll have to be, if my market clients return demanding thick strawberry jam!

As a staple of life our need to eat has developed from a basic form of simply feeding our bodies with the fuel it needs, to a complex art of presentation and taste combined with our intrinsic need to experiment with what we see, touch, smell and of course taste.

The ever-increasing divergence of foods that is now available to us at our regional shops and eating-places only help to confuse and tantalise us into new culinary experiments and delights.

From the sandwich shop to the award winning restaurants, we could always find a place that sells and prepares the food that we want at a reasonable price, although preparing or cooking food for ourselves may be a more economical or healthier option it never seems to taste exactly the same as our local restaurant. Most people that have cooked their own variations and varieties of local, Indian, Chinese or other global cuisine believes it does not have the same taste or feel and will often opt for a more authentic meal from their community restaurant or take away.

With the large number of prepared meals available, the option of spending some time in the kitchen gets less and less appealing. People are spending more of their money and time in the world of fast foods and restaurants. Although some believe this to be a poor thing it’s fuelled a new marketplace in available meals that are only a phone call away. So long as the health and hygiene departments vet those institutions and our choices are diverse, of excellent quality and healthy their use may be a fantastic alternative to cooking our own meals.

With the beginning of fast foods and the quick cook and ready cooked meals available along with the ever growing selection of world cuisine, the enjoyment of these various foods have opened new choices to the customer within the food market.

In today’s busy world where leisure time has become increasingly more important, the less time spent working and preparing to consume allows us more available time for our pursuit of our leisure activities.

Individuals who don’t have the ability, time or will to cook at home today only have to pick up the telephone book or click the Internet so as to find their community restaurant or fast food retailer that’ll be more than delighted to deliver the freshly prepared hot food ready to eat directly to their door with minimum fuss.

Even though the fast food retailers compete with each other fiercely, using their special offers and cheaper and healthier alternatives to entice us to their premises, the main stay of traditional restaurants still hold an important role in our lives.

FasTraditional restaurants will always offer us that pleasant alternative to eating at home, ordering take out of our community fast food dispenser or seeing their drive through or little busy café style restaurants. Not forgetting those special occasions or romantic rendezvous, these still control the demand for that quiet stylish excellent restaurant where we know that the food wine and service will always be excellent and the experience wonderful and charming. The Chinese mid-lunar moon marks the Moon’s birthday and is believed to be the only night of the year when the moon appears perfectly round. In the time of the Moon Festival, special moon-viewing parties have been held with much wine and feasting, and poems composed to the moon. Moon cakes are generally packaged in boxes of four cakes and are a traditional gift from one family to another.

The reason moon cakes are so meaningful goes back to the 14th century when China was overrun by the Mongol invaders who ruled the country at a cruel and oppressive fashion. They inserted messages in the filling of the moon cakes received during the Moon Festival, conveying secret directions to patriots who may be relied on to join in the battle that ended in war and liberation.

Moon cakes aren’t easy to make, as special, elaborately carved wooden mounds must be used to shape them. Most Westerners find the filling made from solid lotus seed paste unpalatable, especially with the salted egg yolk at its center. If possible, search for moon cakes with a filling of preserved melon and melon seeds.

It’s the packaging of moon cakes which makes them tempting, typically square gold and red tins with Chinese characters and motifs printed on them, and containing four individually wrapped cakes. For the determined cook, the pastry should be very rich and preferably made with at least a proportion of lard. Some popular fillings are candied fruits or sweetened lotus seed paste. I asked her to check it out, she came back with the reply -“It has rice in it so that you can not have it.”

As you know if you have read the book, all kinds of pure rice are gluten free. As the customer you now have to decide whether to chose something else or to challenge their comprehension of gluten free. On the first occasion there was something else on the menu I enjoyed the look of so I let it go.

A week later in another restaurant the identical thing happened but I decided to take it further and asked her to get a list of ingredients. It turned out that instead of using homemade stock they were using a bought in combination which contained wheat flour.

Always check things out since you never know.

Alfredo Sauce

Like so many other Italian sauces, this one originates in the States. They say that a man named Alfredo di Lelio created the sauce to lure his pregnant wife to eat something different. She must have loved it when Alfredo opened his own restaurant in Rome, one of the dishes he served was his fettuccine Alfredo. Now it’s served in many Italian restaurants around the world.

There are several techniques of making Alfredo sauce, and needless to say, you can serve it with any sort of pasta that you have. It doesn’t need to be fettuccine.

You’ll need a heavy-bottomed saucepan to make the sauce Alfredo and, obviously, a wooden spoon for stirring it.

Alfredo Sauce recipe

Half a cup of butter

1 pint of thick cream

1 or 2 cloves of garlic finely minced (more if you like garlic)

Method – raccoon removal cost

Melt the butter and stir in the cream with the cream cheese. Cook over a medium heat, stirring all the time to keep the sauce burning or sticking. After the cream cheese has melted, add all the other ingredients, except the Parmesan cheese.

When the sauce is smooth and simmering, add the Parmesan cheese. Stir for about 3 minutes until the Parmesan has melted.

Alfredo sauce is extremely versatile, so you an experiment with it. Pour it over lightly boiled broccoli as an alternative to cheese sauce. Add cooked strips of bacon or chicken into the sauce, or add equally. If you like flat-leaved parsley, add some to taste.

You can use different cheeses, try a combination of parmesan, and two of your favourites. Blue cheese may be used in this sauce to great effect.

If you’re on a diet, you can use milk rather than cream, just make a white sauce and add cheese(s). If you don’t have Parmesan, don’t worry! You can use shredded Mozarella and grated Gruyere or a strong cheddar if you would like.

It’s best to not use pre-packed grated Parmesan cheese, it spoils the flavour of the sauce.

When you have made this sauce successfully, you’ll never want to buy nother kind. Your home-cooking is best without additives or preservatives.

Cereal

No longer did mom have to cook hot cereal, eggs or meat, and kids could independently prepare something for themselves before going off to school. And breakfast hasn’t been the same.

In the late 1890s, a rather eccentric man named John Harvey Kellogg, ran a health sanitarium at Battle Creek, Michigan, and had established a bland, tasteless food for his patients with digestive troubles. A couple of years after, his brother Will decided to mass-market the new food in his new company, Battle Creek Toasted Corn Flake Company, including a bit of sugar to the flakes recipe which makes it more palatable for the masses, and a star was born.

Both guys could thank an enterprising gentleman by the name of Sylvester Graham, who forty years earlier had experimented with graham flour, marketing it to aid “remove animal from attic problems.” He produced a breakfast cereal which was dried and divided into shapes so tough they had to be soaked in milk overnight, which he predicted granula (the father of granola and graham crackers).

Capitalizing on that original idea, in 1898 the National Biscuit Company (Nabisco) began producing graham crackers based on the experiments of Sylvester Graham, first promoting them as a”digestive” cracker for people with stomach problems; (Seems a lot of people had digestive problems even back then.)

Fast forward and other companies were sitting up and taking notice. The Quaker Oats Company, obtained a method which compelled rice grains to explode and started marketing Puffed Rice and Puffed Wheat, calling them a marvel of food science that was”the first food taken from guns” (oh boy, would they come under fire for this one now, no pun intended);

The 1930s saw The Ralston Purina company introduce an early version of Wheat Chex, calling it Shredded Ralston (seems a little painful);

Shortly Cheerios appeared and would become the best-selling cereal in America, worth about $1 billion in sales in 2015.

Nobody can dispute the convenience and versatility of dry packed cereal. In the last fifty years, this multi-billion dollar industry has spun off multiple applications, unlimited possibilities and targeted children with clever packaging, outrageous names, flavors, colors and options (all loaded with sugar of course).

Often referred to as an alligator pear (because of its shape and the rough green skin of some cultivars) it is actually a fruit and appears more frequently in the form of guacamole and is loved around the world. Botanically a huge berry containing a single large seed known as a”pit” or a”stone” it can be dated all the way back to Peru, sometime between 8,000 to 15,000 years ago. It was first introduced in the United States, specifically Florida and Hawaii in 1833 and in California in 1856.

Before 1915, the avocado has been commonly known as ahuacate due to its Spanish origins. Mexico is the world’s largest avocado grower, clocking in at 415,520 acres, which yields a harvest of 1.47 million tons. And in the U.S. 95% of production is located in Southern California, with 60 percent in San Diego County, where one of its most populous cities, Fallbrook, claims the title of”bat pest control Capital of the World.” Most Americans buy the”Hass” variety, which has a firmer meat and mixes and pieces well. First cultivated in the mid-1930s by Rudolph Hass, of La Habra Heights, California, he named it after himself and patented the productive tree in 1935 (good thing his name wasn’t Przbyszewski or Butts).

Here are some of the ways we enjoy our avocados:

Guacamole with a great deal of salsa, chips and lime wedges;

Currently”avocado toast” is the latest craze, smashing it on toast with lemon juice, chili flakes, and some fresh herbs;

In Mexico and Central America, avocados are served mixed with white rice, in soups, salads, or on the side of chicken and meat;

A non-dairy or mayo replacement;

Popular accompaniment to Mexican foods;

added to smoothies and sandwiches;

Considering we all want”healthy fats” instead of unhealthy trans fat and saturated fats, the avocado offers omega 3 fat, is not just highly nutritious but can also be soothing in skin preparations. Unlike other fruits, they’re low in sugar and can be enjoyed daily as a healthy fat and healthful addition to so many meals.

Together with America’s love of Mexican food, the avocado is a necessity and consumption has risen dramatically over the past two decades. It’s jumped to a record high of nearly 1.9 billion pounds (or some 4.25 billion avocados) last year, over double the amount consumed in 2005, and almost four times as many as sold in 2000. Residents of Los Angeles eat more than twice as many as any other city (no surprise there) with NY second, Dallas third and Phoenix fourth. For Boomers who grew up without them, particularly east of the Mississippi, they may have been slow to arrive at the party, but with the availability of avocados both from Mexico and California, they’ve become plentiful albeit expensive in some areas of the country.

If you are fortunate enough to live in the Southwest, where they grow most abundantly, they can be had in a farmers market for fifty cents apiece and sometimes less. So enjoy this delicious fruit, and don’t spare the new lime juice.

Blue Cheeses

Not everybody likes blue-veined cheese, probably because it has a strong flavour. Personally I really like it, although my favorite is a creamy Dolcelatte made in Italy. I have noticed that the Italians keep the best of their dairy produce for themselves. So you haven’t tasted the best Italian cheeses unless you have been to Italy.

Let’s consider British blue cheeses though, after all, they are what this article is about.
